A food stylist has revealed her secrets for creating the perfect grazing boards – and the exact order she follows to arrange the ingredients every time.

Larissa, from Adelaide in South Australia, shared a series of TikTok videos showing exactly how she fills the boards with mountains of gourmet ingredients.

The self proclaimed platter queen said she always starts with cheeses, antipasto bowls and other larger items before styling the boards with cured meats, fresh and dried fruits, nuts and edible flowers.

‘Garnish is everything,’ she said.

‘I always put my cheeses on the board first, along with my antipasto bowls. I put my [fresh] fruits on next, followed by my meat – usually resting on some rocket.’

Next, she stacked the boards with crudités – a French term used to describe sliced or whole raw vegetables such as snow peas, carrots and cucumber sticks.

‘I pop some little crudités, cherry tomatoes, some little praline pecans and some chocolates on there as well and dried fruits,’ she explained.

‘I’ve garnished with edible petals and I also had some blooming sage in the garden so I’ve added that as well because I thought it looked cute.’

Her colourful boards are laden with stacks cheeses, cured meats, strawberries, blueberries, pickled hot peppers, beautifully cut kiwi fruits, grapes, dried apricots, chocolates and raw honeycombs.

Larissa – who runs her own business Graze Gourmet Platter Co selling extravagant platters for birthdays, parties, baby showers and more – said she served the platters with chicken brioches, crudités platters, fruit salad and chips for ‘crowd pleasing’.

Many have asked her questions about creating their own boards at home, including how long cured meats stay outside and where she gets her edible flowers from.

‘I grow most of my own edible flowers but I also buy dried petals,’ she explained.

One follower asked: ‘How do the foods like meat from the fridge keep for so long at room temperature? Grazing boards won’t fit in the fridge, especially summertime.’

Larissa responded: ‘If the food has been out for more than two hours, it can stay out for four hours before being disposed of.

‘Food safety – food safe to consume for up to four hours out of fridge. If it’s been out of fridge for less than two hours, can be refrigerated.’

Before dropping off her spectacular platters, Larissa said she assembles the ingredients at home and stores it safely in a cool room.

‘I have a walk in cool room so I always chill client’s board until delivery or collection,’ she added.
